My happy camper on our walk… I swear he just cried for the first few feet. He always cries when he gets strapped in and as soon as we are in our cul-de-sac he is OUT. We even jogged for about 15 minutes today on our hour long walk- love love love my citi-mini stroller : ).

Baked red potatoes with steak seasoning and sharp cheddar cheese- grilled chicken marinated in lemon, pepper and garlic- with wheat pasta and roasted red bell peppers- YUM.
On Sunday we went shopping with my detailed list from a cookbook-BIG BIG steps for this novice in the kitchen… not because I am lazy… but because I have an affinity against cooking… but I am working on not dreading my time in the kitchen. So I planned out my meals for the week with help from my friend over at http://www.foodfitnessandfamily.com/. All of our meals were planned out and I felt like I was on a mission while shopping. When we got home Dirk stayed in his car seat up on our counter and he watched me prep. I made BBQ chicken, terriaki tofu egg noodle pasta, Garlic chicken, Spicy Chicken burrito bowls, Jicama(diced), Roasted bell pepper chicken with lemon and garlic, egg fried rice and cheesy manicotti. It took about three hours to prep and cook most of the food and store it so that it wouldn’t take quite as long to cook for dinner during the week- especially since Dirk’s hard time of the day is around 6-7:30PM- every night and Gabe doesn’t get home until 6:30-7PM. I felt extremely accomplished and am excited for a healthy week of meals for our family. Last night’s dinner was delicious! Definitely worth the time and energy on Sunday. Sounds like I have another weekend routine : ). Thanks Mady!
